Ingredients:
- 8 small flour tortillas
- 2 cups Brussels sprouts, trimmed and halved
- 1 cup kimchi, chopped
- 1 cup shredded red cabbage
- 1/2 cup sliced green onions
- 1/2 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sriracha sauce
- 1 teaspoon sugar
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
In a bowl, combine soy sauce, rice vinegar, sesame oil, sriracha sauce, and sugar to make the sauce
Set aside
Toss the Brussels sprouts with vegetable oil, salt, and pepper on a baking sheet
Roast in the preheated oven for 15-20 minutes or until they are tender and slightly crispy
Warm the tortillas in the oven for a few minutes
To assemble the tacos, spread a spoonful of the sauce on each tortilla
Top with roasted Brussels sprouts, kimchi, shredded cabbage, green onions, and cilantro
Drizzle with more sauce if desired
Serve the Brussels Sprout Kimchi Tacos immediately, and enjoy!
